Oreo Cheesecake

  1. Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper and set aside.
  2. In a food processor, pulse 24 Oreo cookies until finely crushed. Add melted butter and pulse until combined.
  3. Press the mixture into the bottom of the prepared pan and up the sides about 1 inch. Place in the freezer while preparing the filling.
  4. In a large mixing bowl, beat cream cheese until smooth. Add sugar, sour cream, and vanilla extract, and beat until combined.
  5. Add eggs one at a time, mixing well after each addition. Fold in crushed Oreo cookies.
  6. Pour the filling into the prepared crust. Tap the pan gently on the counter to release any air bubbles.
  7. Bake in preheated oven for 45-55 minutes, or until the center is set but still slightly jiggly.
  8. Turn off the oven and leave
