Ingredients:
- 24 Oreo cookies
- 1/4 cup unsalted butter, melted
- 32 oz cream cheese, softened
- 1 cup granulated sugar
- 1 cup sour cream
- 1 tsp vanilla extract
- 4 large eggs
- 1 cup crushed Oreo cookies
- 1 cup whipped cream, for topping (optional)
Instructions:
- Preheat oven to 325°F (160°C). Line the bottom of a 9-inch springform pan with parchment paper and set aside.
- In a food processor, pulse 24 Oreo cookies until finely crushed. Add melted butter and pulse until combined.
- Press the mixture into the bottom of the prepared pan and up the sides about 1 inch. Place in the freezer while preparing the filling.
- In a large mixing bowl, beat cream cheese until smooth. Add sugar, sour cream, and vanilla extract, and beat until combined.
- Add eggs one at a time, mixing well after each addition. Fold in crushed Oreo cookies.
- Pour the filling into the prepared crust. Tap the pan gently on the counter to release any air bubbles.
- Bake in preheated oven for 45-55 minutes, or until the center is set but still slightly jiggly.
